Becky Homecky

My recent brush with "near tragedy" has turned me into a Becky Homecky...who would have thought it?

I have been cleaning and cooking up a storm.  Ok...I might be exaggerating a tad when I say "cooking up a storm".  There was an online survey by a San Antonio television station asking what people liked to cook during cold weather.

Number 1 answer >>>>  Chili

Number 2 answer >>>>>Caldo

My culinary skills do not stretch far enough to make chili unless it is of the canned variety. However, Caldo though not the best you will ever taste...is doable.

I think I mentioned making Caldo de Res last week and I differentiated from Caldo de Pollo (chicken soup) but if you live in Texas...you know that when you mention Caldo...nine out of ten times it means Caldo de Res or beef soup.


We had just come back from Uvalde and our "highway incident" and I did not feel like shopping for vegetables so I went ahead and bought the complete package.  While I had bought it before, it never has included seasoning...decided to give it a try.


I think I will do without the seasoning next time...it was awful :(

Since then I have made Caldo de Pollo (chicken soup), white rice, lentils, potato salad and jello.  I know that might not be like a big deal to some of you whom cooking comes natural...but to me it was a great accomplishment!

P.S.  In case you are wondering, that is why I changed my avatar to "Chef Betty Boop Belinda" a few days ago. To those who wrote asking if I could make them one...I am sorry but again my talents do not stretch that far. It was a gift from the very talented girls at the Univision Betty Boop forum.

  1. You inspired me last week to make a big pot of caldo. When I went to HEB the first coupla pkgs of soup bones were $11-$13! I almost passed out. Finally found one after digging for $5 but no meat on it. I was disappointed with the results but ate most of it - threw out the rest for the skunk and possum that visit every nite.

    SPURS at the White House yesterday. That was nice. No matter what side you are on politically. GSG!

    1. The price of beef has really soared lately. I too was going to buy soup bones but when I saw the price decided to go with the beef shank which was surprisingly cheaper.

      At least you shared your meal with the nightly critters :)

      It is indeed an honor to be invited to the White House and to get to meet the President no matter your political affiliation. Was looking at the online pictures. President Obama is a tall man but I had no idea until I saw his picture next to Manu that Ginobili was taller.

      Lets hope our winning streak continues into tonight. GSG!!!

  2. Guess what i make is stew, has beef. I buy a small chuck, or any cheap cut of beef, cube it, make my stew with it. Use onion, potatoes, but the rest is canned. Easy, peasy, lol.

    1. Caldo by any other name is basically beef stew. No matter what one calls it, it sure tastes good in particular in cold weather.

  3. I love the "Becky Homecky" moniker! I guess I used to be one but while I still cook everything from scratch, I do it the easiest way possible.

    1. A co-worker tried to correct me and tell me that it was "Susie Homemaker"....told her in my part of Texas it was "Becky Homecky".

      I admire how you make everything from scratch. I am still in awe of how you made those tamales. I am Hispanic and can't make them :-(
